I cooked some jalapeno, habanero and a couple other peppers I can't remember the name of, poppers tonight. Delicious.
Here's the recipe that we followed:
Baked Jalapeno Poppers
Other than using the various peppers (we like to experiment since there's an awesome vendor at the farmer's market who has a *huge* selection of peppers) we opted to use a habanero cheddar cheese blend instead of the chipotle. And decided to try for panko instead of the regular bread crumbs. I'd say I could probably skip on the egg part since it wasn't sticking too well to the skins of the peppers, but it stuck decently to the cheese mix on it's own.
Now René and I both agree that the next time would probably be better with just the jalapenos. As much as we love to kick our faces and bodies in with tremendous heat, we also want to be able to enjoy our food. Now that my mouth is cooled off though, I'm craving even more! Which is funny because I was unable to finish my plate because I had met my match with the Caribbean habanero. (I struggled with while seeding it i.e. coughing and sneezing up a storm) Mmm delicious pain.
